Chicken, Leek + Butter Bean Traybake

"A throwback to one of my most popular traybakes. It’s a great easy family dinner or if you’re feeding a crowd you can just double up on everything. You can serve it with a green veg or mash if you want a heartier dinner. Or add some chopped potatoes to the tray with everything else."

Black Bean Chilli

"I do love a Chilli! This has to be the simplest and quickest Chilli recipe you’ll ever make. With just 7 ingredients it’s ready in less than 30 minutes, is packed with goodness and it’s Vegan. It’s great on top of rice with avocado and a squeeze of lime but if you want a change from rice, try it on top of a baked potato or it works really well served on a tortilla and topped with a poached egg (obvs that isn’t a vegan option!)"

White Bean + Leek Soup

"With x 2 veggie children, beans, in particular, any white bean is a favourite & easy protein source for them. My meat eating middle daughter will also love this. Leeks are perfectly in season at the moment & I love their delicate, sweet flavour. This isn’t really even a recipe, it’s more a process of making a really delicious soup. If you prefer to use kale, go for it, likewise you could also add carrots in the mix, what I’m showing you here is how to make a well flavoured soup with nice crunchy topping that will make every last spoonful as interesting & delicious as the first."

Pasta e Ceci (Pasta + Chickpeas)

"I am certain there as many different recipes for this classic Italian dish as there are brands of pasta in all of Italy. Having a quick cupboard sort through last night I counted x4 packets of dried lasagne. I resolved last night to use at least x1 packet in today’s reel & it sure as hell wasn’t going to be in a lasagne (too much to do today to give that proper care & attention). This recipe is delicious (I’ve just had some for lunch), I’ve mentioned before, Wednesdays are a juggle with everyone eating at different times, reheated gently, perhaps with a slosh more water, this will do a grand job of feeding everyone when they all tumble in."

"I added the remaining lemon zest to my portion but I know it can be quite bitter so that’s a personal preference and I cut the remaining half a lemon into wedges and served them on the side for people to add their own.
I went for this combination because it’s very budget friendly and reminds me of summer"
